Does a data room expose my entire workspace Drive?

No. A room contains the specific Drive files you choose for it. Visitors do not receive general access to the workspace.

Can I stop a shared link from working?

Yes. You can disable the room, set an expiration, or rotate its link. Those controls affect future access through the room, not copies someone has already downloaded.
